Sweet Potato Brownies with Honey Cream Cheese

For the brownies

  • 250 g Sweet Potato
  • 200 g Self raising flour
  • 1 tsp Bicarbonate of soda
  • 50 g Cocoa powder
  • 100 g Butter
  • 100 ml Semi skimmed milk
  • 1 tsp Vanilla extract
  • 3 Eggs large
  • 1 Banana mashed

For the icing

  • 225 g Cream cheese
  • 85 g Honey
  • 30 g Butter


  1. Pre-heat your oven to 160C Fan/180C/350F/Gas Mark 4 and grease and line a 12 x 9 inch traybake tin

  2. Grate the sweet potato by hand or in a food processor
  3. In a bowl measure out the self raising flour, bicarbonate of soda and cocoa powder
  4. Melt the butter and mix in the milk and vanilla extract

  5. Add the butter mixture, eggs and banana to the flour. Mix it really well. Then add the sweet potato and mix it in
  6. Pour it into a lined baking tray and bake for 30 minutes

  7. For the icing mix together the cream cheese, the butter and honey. Spread over the cooled sponge, then slice into squares
